Alcoholic fermentation with indigenous yeasts in a cement deposit at controlled temperature for 14 days. Malolactic fermentation follows. After 12 months of aging in French oak barrels, it was tasted, barrel by barrel, and, among the best, those that best suited this profile of elegance were selected.
